Three Kinds of Halogen

Fry the whole pork on all sides until it is burnt. The main reason is to get the right amount of oil. Frying the whole pork saves the frequency of turning each piece of meat;

After frying, cut into pieces, and continue frying on both sides of each piece of minced meat until it is charred and leave a proper amount of oil, about 2 tablespoons, of the meat. Set aside the meat;

Pour in water to cover the pork noodles, add 1 star anise, 3 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp brown sugar powder, 1/4 tsp salt, 1/2 tsp pepper, 1 tbsp white wine, Stir a few times, change to low heat and simmer slowly;

At this time, you can free up your hands to fry the tofu, and fry the tofu cubes on each side into a brown color to easily absorb the juice and prevent the tofu from breaking during the braising process;

Put the fried tofu into the meat pot and stir a few times;

Add shelled boiled eggs and turn them over from time to time to make the whole egg taste more evenly colored;

Cover and simmer for about 10 minutes;

Open the lid and change the high heat to collect the juice until it is thick, taste it, add seasonings according to your own salty and sweet taste, turn over and stir evenly, put it out of the pot, and enjoy. Enjoy!
Tips:
After the tofu is fried and then simmered, the skin of the tofu will absorb juice and not break during the simmering process, and the look and feel will be better.
