Tiramisu
1.
The biscuits are made as follows: separate the egg white and the yolk (if you don’t know how to do it, then use a separator~)
2.
Add 1/3 of the sugar to the egg yolk and stir well (you ask me how much is 1/3? Please see the material section~ it is 15g)
3.
Add the egg white to the remaining 2/3 of the sugar and beat with an egg beater (it is 30g of sugar)
4.
First pour 1/3 of the whipped egg white into the egg yolk paste and stir well, then pour it back into the egg white paste (why is it so troublesome? Let it stir more evenly~)
5.
Sieve both low-gluten flour and cocoa powder, pour into the egg yolk paste and stir evenly
6.
Pour the batter into the piping bag and squeeze it into the baking pan, 180 degrees for about 15 minutes. (Specifically, you should control the time according to the temperature and color of your oven)
7.
Just out of the oven~
8.
The cheese paste is made as follows: beat the egg yolks with a whisk until thick
9.
The water and sugar are mixed and heated to melt, and the water will boil slightly.
10.
Slowly pour the hot sugar water into the egg yolk twice, and at the same time quickly beat until the egg yolk is thick
11.
Stir the mascarpone cheese with a spatula until smooth (no graininess is fine)
12.
Add the thick egg yolk water to the cheese in small portions and stir evenly
13.
Whip the whipped cream over ice water (it’s easier to whip this way~)
14.
Stir the whipped cream and the egg yolk cheese paste together to form a tiramisu cheese paste.
15.
It's the complete tiramisu: add the rum to the black coffee. (The material catalog is so far away, I will tell you 14ml rum and 40ml black coffee.)
16.
Put on disposable gloves and put the biscuits for the interlayer into the black coffee so that it is completely absorbed, then put it into the bottom of the mousse cup, then add the cheese paste to cover the biscuits, and then put the biscuits that have absorbed coffee and rum in turn, and then pour Add the cheese paste.
17.
Put it in the refrigerator for more than 3 hours and it's done! (Cocoa powder is sprinkled on the top, so it is more beautiful, there is no wood?) Follow the official account: Smart Food, reply "Tiramisu", and check out this video tutorial.
Tips:
1. When the sandwich biscuits are baked in the oven, they are preheated for 5-10 minutes.
2. If the biscuit floats midway, you can make a layer to freeze it and then finish it.
3. Also, when the cheese paste is made, the temperature of the hot sugar water is higher than 60 degrees, which has killed the bacteria in the egg yolk, which is absolutely healthy.
