Carry out the first fermentation: take a piece of plastic wrap to cover the dough in the bread bucket to protect the humidity and start the bread machine fermentation process. The picture above shows the state of fermentation in a bread machine for 40 minutes. I dipped the flour into the dough with my hands, and the finger holes quickly retracted, indicating that the fermentation was not good. Continue to ferment for 25 minutes, reach into your fingers, and retract a little bit slowly, I'll do it this way. This is the time I use, it may not be suitable for everyone, it depends on the situation

Take out the dough and knead the dough to exhaust air. It must be exhausted completely, otherwise there will be big bubbles in the baked toast, and I will beat it hard. After exhausting, divide into three evenly, knead into small dough, cover with plastic wrap and wake up for 15 minutes.

Take a awake dough, roll it into a long strip with a rolling pin, and roll it up from one end. Roll while pressing, be sure to roll tightly, otherwise there will be large gaps in the toast.

Carry out the second fermentation: Because it is winter, the oven is used for fermentation. The oven is preheated to 45 degrees, and a plate of hot water is placed to ensure the temperature and humidity of the fermentation. The toast box is covered with a damp cloth and placed in the oven.

I put it in the oven to ferment. I spent more than two hours, and it fermented to 9 minutes full. Put on the lid of the toast box, preheat the oven to 195 degrees, and the middle and lower level of the oven for 45 minutes. The baking temperature and time depend on the temper of the oven~ The temperature of my oven is lower.
