Tofu Ball Soup

One piece of tofu, two-thirds cut into pieces and rinsed with light salt water to remove fishy and firm tofu, and the other third to be crushed with a knife, the thinner the better.

Chop part of the ginger and soak in freshly boiled water for at least ten minutes.

Shred part of the ginger, part of the garlic, cut the green onion, and mince the part of the garlic.

Remove the stems of the shiitake mushrooms, wash and cut into thick slices.

Add water to the soup pot, add shiitake mushrooms, add ginger and garlic slices, and add a little salt. After the heat is boiled, simmer the soup on low heat for at least 15 minutes.

Tips:
1. I like to eat bile tofu, so I almost buy bile tofu for cooking. If you like to eat gypsum tofu, you can buy gypsum tofu.
2. This dish tastes better with oyster mushrooms or shiitake mushrooms than shiitake mushrooms. I didn’t buy it today, so I can only use shiitake mushrooms instead. No matter what kind of mushrooms, the procedure is the same.
3. Green leafy vegetables can also be replaced, such as rattan vegetables and Chinese cabbage seedlings.
4. When tofu and minced meat are whipped, because tofu has more water, the amount of ginger water is less than when making ordinary meatballs.
