Tofu Brain

Prepared ingredients.

Soak the soybeans in clean water for more than 12 hours.

Add 1000ml of water to the soaked soybeans and grind them into soy milk with a food processor.

Filter out the bean dregs with gauze.
5.
The filtered soy milk is cooked and let cool to 85 degrees.

Add a little water to the lactone to dissolve.
7.
Pour the soy milk into the soy milk and stir in one direction, then cover and simmer for two minutes.

Spoon the cooked tofu into a bowl.

Add dried shrimps, seaweed, mustard, soy sauce, sesame oil, and chopped green onion while it's hot! !
Tips:
1. The temperature must not be too high, control it between 80 and 90 degrees. Otherwise it will become sour and become flocculent. Too much lactone will make it sour, and if it is less, it will not solidify.
2. After pouring the lactone, be sure to cover it and let it stand for a period of time, during which time it must not be stirred or moved.
3. Add the ingredients in the tofu brain according to your own preferences.
