Tofu Crucian Carp Soup

A fresh crucian carp, about 400 grams, is slaughtered and scaled, and the gills, internal organs and black membrane of the abdominal cavity are cleaned for later use.

Sliced green onion, sliced ginger, sliced garlic, sliced fat, and prepare two star anise

Add oil to the hot pot, add the fat slices and stir to get the oil

Gently add the crucian carp and fry until golden on both sides

Add green onion, ginger, garlic and star anise until fragrant

Add appropriate amount of boiling water, pour in a little cooking wine and white vinegar, boil over high heat to remove the foam

Put the tofu into a low heat and simmer for about 30 minutes

The soup is simmered into a creamy white, add some salt and white pepper to taste
