Tofu Soup with Salmon Head

All the ingredients are ready, and the salmon head must be fresh. Generally, it is rarely seen for sale. If you see it, you must hurry up and buy it.

The salmon head is cut into small pieces, and then marinated with cooking wine, ginger, and salt.

Cut tofu into pieces, buy brine tofu for tofu, and northern tofu, which is the hard one. Don't buy the soft one. Wash the small rapeseed and set aside.

Fry the marinated salmon head. You don't need to coat it with starch. You can fry it directly. This step is also a trick to keep the stew from being fishy. Remove it after frying and leave the oil in the pot.

Put the oil of the fried fish in a scallion, ginger, garlic and sauté pan until fragrant, then pour in the fried fish head, add an appropriate amount of water, pour in tofu cubes and tomato cubes, and season with salt. Here, choose the well-ripe tomato. For the juicy and plump, it is best to remove the skin and cook for about 30 minutes on medium heat.

Add the small rapeseed and cook for a few more minutes. Don't put too much seasoning when the soup is stewed, so as to maintain the umami taste of the fish soup.

1. The salmon head soup does not need to add too many seasonings, and the star anise pepper is not needed, except for the ingredients to add salt and oil, so that the soup is original and tastes delicious.
