Tofu with Mushroom Minced Meat

1. Soak the soy after washing

2. Add bittern in a small bowl, pour 40 grams of water and mix well

3. Pour the soybeans into the wall breaker twice and add 900 grams of water each time to start the mixing process

4. Filter Okara

5. Skim the foam and stir while burning on medium heat to prevent sticking to the bottom and boil for 5 minutes and then turn off the heat

6. Let stand for 8 minutes, pick out the tofu skin on top

7. Start ordering tofu, stir with a spoon while ordering, mix well, cover with lid and let stand for 20 minutes

8. Then put it into the mold (the tofu cloth must be soaked first and then padded into the mold)

9. Press on heavy objects

10. Then cut the tofu into small pieces, wash and cut the shiitake mushrooms, prepare to mix the minced pork

11. Prepare garlic, water starch and chopped green onion

12. Pour oil in the pot, heat the oil for 5 minutes, add tofu and fry until golden, then remove

13. Save the bottom oil and add the minced pork and stir-fry until the color changes.

14. Pour the garlic and sauté

15. Add shiitake mushrooms and stir fry for a fragrant

16. Add the fried tofu, then add the spicy sauce and stir well

17. Add in water and bring to a boil, then turn to low heat and cook for a while

18. Try the taste and add salt to taste

19. Add sugar to taste

20. Finally, thicken the starch with water and turn off the heat.

21. Put it into a bowl and add chopped green onion

Tips:

1. If you want tofu to taste firm, press it for a while, I usually press it for 20 minutes
2. Each restaurant has different tastes, please season it according to your own taste
