My kid likes to eat rice noodles. Every time he sees a rice noodle shop, he can’t walk around. Later, his father bought him Guilin rice noodles online, so I made it for him at home. The kid said, it's so delicious, you can cook it for me if I want to eat it in the future.

Tomato Beef Rice Noodles

1. Soak the rice noodles for more than 2 hours in advance, it will become soft, and it’s okay if you don’t soak, but it will take a lot longer to cook.

2. Bring water to a boil in the soup pot, add the soaked rice noodles, and cook for a while until there is no hard core.

3. Prepare the side dishes. I used stewed beef. My family will stew a pot of beef every week. It is very convenient to use for the following.

4. To process the ingredients, cut beef into small pieces, chop tomatoes, mince green onion and ginger, and spinach to remove oxalic acid.

5. Add oil to the wok, sauté the scallions and ginger

6. Add beef and tomatoes and stir fry

7. Turn into a paste, add some salt to taste

8. Add beef broth or clean water, bring to a boil on high heat

9. Add the rice noodles just cooked

10. Knock in the eggs, add good spinach, and cook for another 2 minutes, because mine is a poached egg, if you break it, just stir it up.

11. Serve in a bowl

Tips:

You can also make chicken soup. The rice noodles are thick Guilin rice noodles.
