Tomato Potato Soup

Peel and cut potatoes into small pieces, soak in water to remove excess starch; wash and slice tomatoes

Heat oil in a pan, add tomatoes and stir-fry until tomato juice appears, set aside

Heat oil in a pan, add potatoes and stir fry for a fragrant flavor

Put the fried tomatoes and potatoes together, add ginger slices and some water and cook until the soup turns red and the potatoes soften. Add some salt to taste.
Tips:
Because you don’t want the soup to be too greasy, you must add less oil when sautéing tomatoes and potatoes, or remove excess oil when cooking the soup.
