Wash the carrots and cut into diced pieces, diced the elbow sausage, and chop the green onions for later use.

Heat the oil in a non-stick pan, add the diced carrots and stir-fry until soft.

Add elbow sausage and stir-fry chopped green onions a few times.

Add rice and stir fry evenly, add some salt and mix thoroughly. Take it out for later use.

Beat the eggs, add a little salt and a spoonful of water and mix thoroughly.

Pour a little oil in the non-stick pan, then pour the egg liquid, turn the pan, and fry on low heat.

When the egg is half solidified, turn off the heat, add half of the fried rice, flip over the other half of the omelet, and press the edge of the omelet.
Tips:
1 Turn off the heat when the egg mixture is half solid. The remaining temperature of the pan will fry the omelette.
2 When putting the rice in, move faster, or the omelette will be cooked and the edges will not stick together.
