There is always a need for more changes in life to be colorful, and the same is true for cooking. Steamed buns are my family’s daily staple food. They often appear, but they are always buns with white flour. I feel bored if I eat too much. Then take a little bit of thought and give it a little change!
Purple sweet potato is a very good color-enhancing ingredient. It is beautiful in color and rich in nutrients. My family often steams and eats it. Sometimes if it gets too much steamed accidentally, it can be used to knead noodles and make steamed buns. The finished product is noisy and delicious, and it is delicious. The recipe I shared this time contains a lot of purple sweet potatoes. I used three smaller ones, so that the steamed color will be darker and look better. If you like a slightly chewy texture, you can appropriately subtract some purple. Make the amount of potatoes higher in flour content, which will make it more gluten. As for the amount of water, you also need to adjust accordingly. Chinese-style pasta is more casual, and you don’t have to use a kitchen scale to weigh it so accurately, it feels almost fine. Please read down for detailed step diagrams and text descriptions! "

1. Peel and crush the steamed purple sweet potato into a small pot;

2. Add water and yeast powder, stir with chopsticks;

3. Put in flour

4. Stir clockwise with chopsticks so that you can check whether the amount of water and flour is appropriate;

5. Move the dough to the kneading mat and start to knead. At this time, you can still see the pieces of purple sweet potato. It doesn't matter, it will fuse together when you knead.

6. After kneading the dough, the purple sweet potato and the flour are already fused together at this time;

7. Put it in a small pot and ferment in a warm place to double its size. (Here is a small coup. It’s not easy to ferment in cold weather. Put some warm water in the steamer so that your hands don’t feel hot. Then put the small bowl of noodles in the water and cover the lid of the steamer. It takes more than an hour to ferment, and the specific time depends on the room temperature and the amount of dough)

8. Take out the fermented dough, vent and knead it evenly. Because the proportion of purple sweet potatoes in this dough is relatively large, the flour is softer, and it will be a little sticky. Put in some dry powder and it will be better;

9. Divide into several small doughs;

10. After shaping and rounding, knead into a cone shape;

11. Put it on a plate, proof at room temperature for 15 minutes, steam for 20 minutes, and simmer for 3 minutes before taking it out. (I use the steaming function of the steam oven here. If you use a normal steamer, boiling the water pot will be the same as this time)

12. When the time is up, open the door and you can take it out;

13. The colors are more beautiful in well-lit areas. The color of purple sweet potato melted into this steamed bun.

14. Break it apart and take a look, isn't it beautiful? This steamed bun has a large purple sweet potato content, so the steamed bun is very soft and has a good taste. It is suitable for the elderly and children. If you are tired of eating big white steamed buns, you can try adding some purple sweet potatoes to add some color to the table!

Tips:

It’s not good to make noodles in cold weather. Here is a little trick. Put some warm water in the steaming pot so that your hands don’t feel hot. Then put the small bowl of noodles in the water and cover the steamer. The lid of the pot can be fermented in about an hour. The specific time depends on the room temperature and the amount of dough.
