What is buttermilk?
Buttermilk literally means butter milk, but it contains neither butter nor milk. Its texture is like cream. It seems mysterious, but in fact it is a dairy product. It is one of the common ingredients in pastry baking.

Its function is to chemically react with the baking soda in the ingredients to release carbon dioxide, making the cake softer and more delicious.

So buttermilk cannot be replaced with milk or yogurt. Now I will share two ways to make buttermilk, one is more violent and the other is more normal.
