Vegetable Noodles

Prepare the main ingredients. I forgot to take photos of the condiments. Wash the eggs first, so that they are cleaner. Spinach needs to be washed first. Soy sauce, salt and soy sauce are all poured into a bowl for later use.

Boil the water to cook the noodles, so the water must not be less. The noodles are more draught during the cooking process.

Boil for about two minutes, open the pot, turn the noodles over, and continue cooking in the pot with a lid. Don't leave it will boil.

Cook it for about 5 minutes and it will become soft. Turn off the heat at this time. You can fish out the noodles.

There is still noodle soup left in the pot. Don't waste it. Blanch the cleaned spinach. The spinach must be blanched so that the oxalic acid will be reduced a lot. Just boil the pot again.

Add all the ingredients to the bowl. This makes it easier to mix.

Fry the eggs, put a little bit of oil first, beat the eggs in the pan when the pan is hot. Seeing that the edges are already cooked, add a little water to cover the pan and it will squeak, turn off the fire if it doesn’t sound, the eggs are cooked and tender

Put the noodles in the bowl, I like to add the noodle soup in the bowl so that the noodles will be very hot.
Tips:
1. This noodle is cooked quickly, so you must put more water in the noodle so that the noodle soup cannot be boiled with less water.
2. If you don't like the fried eggs, you can replace them with boiled eggs, which is the best according to personal preference.
3. The winter spinach used in this recipe. If you don't like the taste of spinach, you can replace it with Shanghai green or lettuce.
4. When cooking noodles, you can directly put salt or green vegetables in it and cook together. Spinach is cooked and put into the noodles because of oxalic acid.
