Braised Noodles with Beans

Put the flour and a small amount of salt together and set aside.

Add water to the noodles, mix the noodles into a dough, cover with plastic wrap, and let it rise for 20 minutes.

Roll the proofed noodles into thin noodles and set aside.

After the dough is rolled out, sprinkle with dry flour, and then roll up from top to bottom as shown in the figure, set aside.

Then cut the rolled noodles into even noodles, sprinkle with dry flour again, shake evenly, and set aside.

Heat the prepared noodles and steam them until they are ripe. Generally 15 minutes is enough.

Wash the beans, blanch in hot water, cut the meat into shreds, chop the onion and garlic, and set aside.

Put oil in the pan, wait for the oil to boil, add the shredded pork and stir fry until it turns white.

When the shredded pork is mature, add the beans, add the onion and garlic, and stir fry.

Add dark soy sauce, salt, and stir fry until evenly colored.

When the beans are evenly colored, add water and simmer for five or six minutes.

Next, add the steamed noodles and simmer for three to five minutes.
13.
After the noodles are simmered, stir well and serve.
Tips:
When the noodles are braised in the later stage, you must pay attention to the heat and be careful of sticking the pan.
