Vegetarian Fried Bitter Gourd

Prepare bitter gourd, and two vitex thorns for later use.

Wash the bitter gourd, remove the flesh and slice it, add an appropriate amount of salt, stir well, and marinate for 20 minutes.

Wash and remove the stalks of the second vitex, cut into sections.

After the bitter gourd is pickled, squeeze the salt water; soak in clean water for 3 minutes, then squeeze the water dry.

Heat the wok without pouring oil.

Add bitter gourd and stir fry.

Stir-fry the bitter gourd water and serve.

Pour an appropriate amount of vegetable oil into the wok and heat it up.

Put the two jingtiao and stir fry.
10.
Add bitter gourd again and continue to stir fry.

Mix the two ingredients and stir-fry, add an appropriate amount of salt, and stir-fry evenly.
12.
Turn off the heat and start the pot.
Tips:
1. After the bitter gourd is sliced, it must be pickled with salt to taste, and then soaked in water for a few minutes. Stir the bitter gourd for the first time without adding oil, stir fry the bitter gourd for the second time and add oil again. The bitter gourd fried in this way is not bitter at all.
