During the New Year, we will prepare some dishes to entertain the guests. The ingredients are complete to make this dish very suitable. The taste is salty and savory, and I am used to eating big fish and meat to relieve the greasiness of the vegetarian food.

Vegetarian Stir-fried Mixed Vegetables

1. Soak and wash daylily, shiitake mushrooms, fungus, and peanuts in advance

2. Ginkgo peeling and soaking hair

3. Peel and shred lotus root, soak in vinegar water

4. Wash and shred green and red peppers

5. Remove the roots of enoki mushroom and wash

6. Shred various vegetables for later use

7. Add a little oil to the pot and fry the pepper on a low fire until it turns purple. Remove it.

8. Add enoki mushrooms and lotus root and stir fry

9. Stir well, add peanuts and ginkgo, stir fry

10. Add soybean sprouts and stir fry, while adding a little boiled water, add a little chicken essence, sugar, light soy sauce, cooking wine and stir fry for about 1 minute

11. Finally, add all the greens and stir-fry until they are broken.

Tips:

1. The vegetables must be put last.
2. The lotus root soaked in vinegar water can prevent blackening.
3. The amount and variety of dishes can be adjusted as you like.
