Vegetarian Version of Curry Mixed Vegetables

Cut carrots, potatoes, tomatoes, and cauliflower into a hob shape.

Heat oil in a pan and fry carrots and tomatoes first. Because carrots are harder to cook, tomatoes are easier to taste when cooked longer.

Add the potatoes and continue to fry for 3-5 minutes. Potatoes are delicious only if they are fried in powder.

Add boiling water and cook for about 20 minutes, adding more water several times, being careful not to dry the pan.

Add cauliflower and cook together. The cabbage flowers used now are harder, so you can cook them more. If you use broccoli or dense cauliflower, don't cook it for a long time.

This is a vegetarian curry, which does not contain five spices and custard. If you are not a vegetarian, you can choose another brand

Generally, within 5 people, I only use 2 pieces of curry paste. Add the curry paste and boil it to melt.

Tips:
1. Normal curry will put onions. If you like onions, you can also add them. I would suggest to stir-fry the onions first, and wait until the curry paste has melted before adding the fried onions. In this way, the onion can keep slightly sweet and have a better taste. Because I insist on being vegan, I don’t use onions.
2. If you want to cook for children, you can add apples and pineapples. Children will like the sweet and sour taste.
