Walnut Meringue Rolls
1.
Put the walnuts in the oven and bake at 180 degrees for 7,8 minutes, and roast them until fragrant. After cooling, cut the walnuts in half and set aside.
2.
Let’s process the apple again. Peel off the skin of the apple, then remove the core and cut the pulp into cubes.
3.
Put the diced apples in a small milk pot, add fine sugar, and cook over a low fire. No water is added in this step.
4.
After simmering for a few minutes, the moisture of the apple will come out, and then add a little lemon juice
5.
After boiling for about ten minutes, you will find that the color of the apple is getting darker and darker.

At this time, the apple pulp has become ripe and soft. First add light cream, and then add a liquid mixed with 15 grams of starch and 50 grams of water. At this time, the apple sauce will become thicker and keep it from stirring. Paste the bottom of the pot
7.
Then add the chopped walnuts, stir for a while, stop the fire, stir the walnuts and apples evenly with the remaining temperature, and the walnut and apple fillings are ready

This is how it looks all wrapped, I wrapped about 10
15.
Preheat the oven to 190 degrees, put on the middle layer, and bake on the top and bottom for about 12-15 minutes, and the surface will turn golden yellow
16.
After baking, let it cool for a while, or just cut it up and eat it.
Tips:
1. Spring roll wrappers can also be replaced with puff pastry wrappers. The taste will be better, but the calories will be higher;
2. I bought this spring roll wrapper as a ready-made product. It is relatively thick, so it tastes a bit hard when baked. Try to use thinner slices, which will be more crispy;
3. This dim sum is suitable for eating while it is hot. If it is eaten the next day, the texture of the dough will be slightly harder. You can steam it in a pot before you can eat it, and the dough will soften. It is also good to eat as a spring roll with fruit filling;
4. I use Aksu apples, which are very sweet, so I don't add much sugar. When you make your own stuffing, adjust the amount of sugar yourself.
