West Lake Beef Broth

To prepare the ingredients, I use cooked braised beef here. The taste is different from the authentic method.

Marinated beef cut into small cubes, ginger sliced

Put the diced beef and ginger together in a pressure cooker and add a large bowl of water to simmer for 15 minutes, so that the aroma of beef blends into the soup. (You don't need a pressure cooker, but you need to add more water and cook for a while)

Cut the soft tofu into small cubes, beat the egg, and chop the green onion into chopped green onion for later use

After the beef is cooked, pour it into the soup pot together with the soup, then pour in the tofu, add oil, salt, white pepper, light soy sauce and cook for a few minutes

Pour in the water starch and stir for one minute, then slowly pour in the egg liquid, while using chopsticks to quickly beat the eggs in circular motions, finally add sesame oil and sprinkle with green onion.
