White Sticky Meat

Pork belly.

Pepper, aniseed, cinnamon, bay leaf, angelica, ginger, cooking wine.

Put all these in a pot of boiling water and cook for 3-5 minutes.

Boil the meat in the pot again. Start with high heat, then simmer for 1 to 1 and a half hours.

Prick it with chopsticks to see if it can be pierced through or not, if it can—that is, it is cooked thoroughly, take it out of the pot, let cool and slice.

Adjust the vinegar and garlic juice. Blend with vinegar, garlic mash, and sesame oil.
