Winter Melon and Clam Soup

Prepare winter melons and clams, and add more clams if you like.

The clams you bought should spit out mud and sand, put them in the water, put a little salt and a few drops of cooking oil, so that they can vomit faster.

Peel and seed the winter melon and cut into thin slices for later use.

The clams that have been spit out mud are blanched in water first, and they just need to be boiled. It doesn’t need to be cooked for too long. Some people don’t like blanching and just put them in the pot. I am used to blanching because the blanched soup is very muddy and fishy. Taste, if you boil the soup directly, it will affect the taste.

Put water in the pot, add the cut winter melon slices, add an appropriate amount of salt, and bring to a boil.

Put in some shredded ginger, because winter melon and clams are cold foods.

After the winter melon is cooked, pour in the clams and cook. It does not need to be cooked for too long. Pour in a spoonful of sesame oil.

Finally, add a little coriander or chives to turn off the heat and cook.
