Winter Melon and Clam Soup

The clams that I bought back have already spit out sand, just rinse them off with running water

Put water in the steamer, put on the grate, put the clams on the grate, put onion and ginger cubes, and steam for 5-10 minutes on medium heat

After boiling for 5 minutes, open the lid and take a look. If you see the clams have openings, pick them out immediately.

Place the open clams in a bowl to cool, take out the clam meat after cooling, and set aside; wait for the water in the steamer to settle after the residue, pour out the clear soup, set aside

Winter melon peeled and seeded, washed and sliced; beaten eggs

In another pot, pour the clear clam soup and bring to a boil; pour the winter melon, boil, and cook until the winter melon becomes slightly transparent

Pour in the clam meat and boil it again

Pour in egg liquid and boil, add salt to taste, pour a little sesame oil, serve and serve
Tips:
Don't steam the clams for a long time, so as not to become old.
