Winter Melon Oxtail Soup

4 pieces of oxtail, rinse well.

Blanch the water and boil the bleeding foam.

The blanched oxtail is washed again with warm water and put in a casserole. Add water to cover the oxtail bone, add star anise, green onion and sliced ginger. Add enough water at once. After it is boiled, turn to the lowest heat and slow cooker.

Peel the winter melon.

Slice it, not too thin, otherwise it will easily rot when stewed.

I made this oxtail bone and simmered it for about 2 hours, and the meat was soft and rotten.

Add winter melon and salt at the same time.

Continue to simmer over medium heat for more than ten minutes until the winter melon is translucent and tender.
9.
Add some chopped coriander to a large bowl.
10.
Add the stewed winter melon and oxtail.
