Winter Melon Pork Ribs Soup

Wash the ribs, put the ribs in a cold pot with cold water, add an appropriate amount of cooking wine, 3 slices of ginger, boil on high heat, cook until the ribs change color, skim the foam, wash the ribs and set aside.

Peel the winter melon, remove the seeds, and cut into pieces.

Put the ribs in a pressure cooker, add 1.3 times the amount of water to the ribs, add scallions, 3 slices of ginger, and pepper. Select the "spare ribs" button in the pressure cooker. It takes about 50 minutes.

Transfer the stewed ribs to the soup pot, add winter melon, add 2 tsp salt, 1 tsp chicken broth, boil on high heat, simmer on medium heat for 15 minutes, then it will be out of the pot, taste before out of the pot and season with salt as needed.

Sprinkle with chopped green onion.
