Wuhan Version of Braised Prawns with Oil

Pour the oil into the hot pot, heat it to 80% hot or more, and pour the shrimp into the boiling oil. Roll until the tail of the shrimp is rolled up to a deep red color. Then pick it up.

Leave the oil in the pot and spread over the bottom of the pot. Add sliced ginger, garlic, onion, coriander stalks, and green onions. Stir fry over low heat.

Wuhan also has the habit of heating dry noodles in the soup and mixing it with them. In this case, just don't boil the soup to dryness.
