Xiamen Shacha Noodles

Prepare noodles,
Wash and slice pork,
Wash the liver and rinse with water,

Go to the shrimp thread and wash the shrimp.

Stir the shrimp with cooking wine, salt and starch.

Put an appropriate amount of water in the pot to boil, put some oil, ginger slices, green onion knot, cooking wine.

Put down the meat slices and blanch them until cooked.

Put down the pork liver and blanch it, remove it.

Put down the shrimps and blanch them, remove them.

Take another pot, put an appropriate amount of water, boil, top noodles, cook the noodles, remove, and mix well with vegetable oil.

Take another pot, put the broth (the bone broth I used), add the cooking wine, ginger slices, boil, put the oily tofu, and cook for 5 minutes.

Boil the peanut butter with warm water.

Put 1 point of tomato sauce.

Add peanut butter.

Put in 3 tablespoons of shacha sauce

Put some minced garlic, salt, sugar, and freshly smoked.

Add pepper and simmer for 10 minutes.

Put down the small green vegetables and boil, add chicken essence and turn off the heat.

Put the noodles in a large bowl, put pork slices, shrimp, pork liver, oily tofu, green vegetables.

Scoop into the soup and sprinkle some chopped green onions.
Tips:
1. Alkaline noodles should be used for shacha noodles. I don't have it here, so I just buy normal noodles.
2. Put a little ketchup, the color is better, you don't need it.
3. The most important thing about shacha noodles is the soup, you must use the broth, I use bone soup.
4. There are many ingredients in Shacha Noodles, you can make what you like. Pig blood is commonly used. If you don't buy it today, you can save it.
