Yam Pork Ribs Soup

Cut the ribs into sections and wash off the black fungus.

Peel the yam, cut into hob pieces, and soak in light salt water.

Cut green onion into sections, slice ginger and set aside

Put the ribs in half a pot of cold water, put two slices of ginger, bring to a boil, boil for 3 minutes on high heat, turn off the heat and remove.

In a separate pot, boil 2.5 liters of water, add the ribs, add the remaining ginger slices and green onions, add white vinegar, boil and turn to low heat.

After the ribs soup is simmered for 30 minutes, add yam and black fungus, and simmer for another 20 minutes.
7.
Season with salt, turn off the heat and serve.
Tips:
1. Wear gloves when handling yam. If it is stained by sap, wipe it with vinegar to relieve itching.
2. The cut yam is soaked in salt water for later use to prevent oxidation and discoloration.
