Braised chicken rice with yellow rice is also called fragrant chicken pot, chicken pot rice with thick sauce, which is a famous dish in Shandong. It is a traditional famous food of the Han nationality from Jinan, Shandong, belonging to the Lu cuisine.

Yellow Braised Chicken Rice

1. Soak dried shiitake mushrooms in hot water while keeping the shiitake water

2. Cut the chicken into small pieces and put it in a bowl, add the cooking wine and light soy sauce, stir evenly and marinate for 20 minutes

3. Cut green pepper into pieces with a hob, cut potatoes and onions into pieces, cut dried chilies into rings, and slice ginger for later use

4. Pour the oil in a hot pan, add ginger slices and dried chilies to stir fragrant

5. Pour the chicken and stir fry for about 2 minutes to start the pan

6. Prepare the casserole, pour the chicken into the casserole, pour the mushroom water reserved before soaking the mushrooms

7. Pour shiitake mushrooms, dark soy sauce, rock sugar, salt into the casserole

8. Cover the pot and simmer on medium heat for about 15 minutes

9. Add potatoes, green peppers, onions, enoki mushrooms, and garlic cloves again, simmer for 5 minutes, and serve with a bowl of rice.

Tips:

You can also add some red peppers
