Yibin Burning Noodles

Prepare the sprouts and minced meat in advance (for details, please refer to Jingfeng's other recipe). Also prepare the spicy millet and the chopped scallions (you can also prepare some scallions and coriander according to personal preference)

Sichuan alkaline water surface (yes, yes, that’s the magical alkaline water surface in a certain drama~)

Use a knife to press the peanuts a little bit, don’t press them into the end, keep a little bit of the peanuts to taste better

Take a small bowl, add spicy millet, chopped two vitex, sesame seeds, chili powder, and pepper powder for later use (the amount of chili can be adjusted according to personal preference)

Pour hot rapeseed oil in a small bowl to make fresh chili oil (ready chili oil can also be used, but I prefer fresh chili oil, which is more fragrant!)

Cook the soda noodles in a pot (do not cook too soft), drain the water and mix well with the prepared chili oil

Put it on a plate, spread sprouts with minced meat, ground peanuts, and sprinkle some spicy millet and sesame seeds (you can sprinkle some green onion, coriander, etc.) according to personal preference.
