You Can Make Delicious Yogurt Cake without Using An Oven
1.
Separate the egg whites and the yolks. The container must be water-free and oil-free. Add yogurt to the egg yolk and mix well.
2.
Then add corn oil and stir well. Sift in low-gluten flour. It is best to sift the flour to reduce the particles, and the taste will be better.
3.
Use a manual whisk to mix into a uniform yogurt yolk paste. Add a few drops of white vinegar or lemon juice to the egg whites. Use an electric whisk to make thick fish bubbles and add one-third of the sugar. Make fine bubbles and add one-third of the sugar. Texture the egg whites and add the remaining one-third of the sugar. Until the egg white is lifted up and there is a small vertical hook, even if it is done, remember that the egg white must be in place, otherwise it will defoam.
4.
Add the egg whites to the yogurt yolk batter three times. Stir evenly with the mixing technique. Yogurt defoams easily so I didn't stir it vigorously.
5.
Pour the mixed batter into the mold. If there is no mold, you can use more than a few small containers at home. Drop the mold from a height of about 10 cm several times to shake out the bubbles inside. The mold must be covered with high-temperature-resistant plastic wrap, and no water vapor can enter. It can also be wrapped in tin foil. Don't cover it with plates or bowls. The effect is not good. Don't ask why I tried them all.
6.
After boiling the pot, turn to medium and small heat. Remember it is a small and medium fire, not a small fire. Steam in a pot on cold water for more than 20 minutes. The specific time depends on the size of the mold. Then shake it out a few times and let it cool.
Tips:
hint:
1. Do not grease the mold.
2. The steamed cake mold must be covered with tin foil or plastic wrap, otherwise it will collapse badly when it is steamed.
3. After steaming, do not open the lid immediately, cover it for a minute or two.
4. The egg whites must be beaten in place, preferably an electric whisk. Don't over-mix, the yogurt is easy to defoam.
