In Yunnan, when I first came across the name Baba, I was very curious. I couldn't wait to see what it looked like and what it tasted like. After seeing it and tasting it, I realized that the name is actually different in various places. The so-called Baba is basically similar to the sesame seed in the Central Plains, but the method is different and the taste has its own local characteristics. There are also many kinds of baba in Yunnan. The only ones I have eaten include Xizhou baba, Lijiang baba, and highland barley baba, buckwheat baba and so on. I feel more particular about Lijiang Baba, with diced ham, and nut filling, which is very fragrant and has a particularly rich taste. There is also the Xizhou Baba, a super traditional charcoal grill. I want to make it myself. I don’t have the kind of guys in Xizhou. Just make the Lijiang ham paba and enjoy the taste of Yunnan.

Yunnan Ham Baba

1. Yeast powder melted with water

2. Pour the yeast water into the flour, add an egg and 10 grams of milk powder

3. And into a smooth dough

4. Ferment at room temperature to double size

5. Sesame, walnuts, and pumpkin seeds are all sautéed and rolled into pieces

6. Mix well with sugar and salt to make fillings

7. Ham brought back from Yunnan

8. Cut into small pieces after steaming

9. The developed dough is vented and relaxed for a few minutes

10. Roll into a large piece, mix edible oil, five-spice powder and a pinch of salt and spread on it

11. Sprinkle with a layer of diced ham

12. Roll up from one end

13. Cut into sections

14. Take a section and squeeze the mouths at the ends

15. Then squeeze and pack into the right amount of nut filling

16. Squeeze after wrapping

17. Put an appropriate amount of oil in the pan, if frying. Cover while frying

18. Turn over after one side is golden, and fry on both sides. The ingredients that I make by myself are more real and very delicious
