Yuxiang Eggplant

Add some salt to the shredded pork and marinate for 5 minutes.

Mince the onion, ginger and garlic.

Wash the eggplant and cut into round slices.

Put the oil in the pot and heat it, then add the eggplant rounds and fry until soft.

The fried eggplant slices are served.

Leave a little oil in the pot, add green onion, ginger, garlic and stir fry to create a fragrance.

After the onion, ginger, and garlic saute, add the shredded pork and stir fry.

After the shredded pork is cooked, add the fried eggplant slices and stir-fry evenly.

Cook the sauce made of spicy bean paste, sugar, vinegar, a little starch and water, stir-fry evenly and serve.
Tips:
1. Eggplant is easy to oxidize and turn black. Cut it quickly before frying.
2. Because I used spicy bean paste, I didn't add salt, so food friends can add it according to personal preference.
