Recently, I have been cooking some dishes that I have never done before, which is also a kind of self-challenge.

Yesterday I asked my husband what he wanted to eat. This guy said he wanted to eat noodles without even thinking about it. Any noodles would be ok with marinated noodles, fried noodles, noodles, or braised noodles. Well, northerners like noodles, but it is really difficult for me to be a southerner to make noodles.

As the logistic manager at home, I still have to satisfy my family's needs as much as possible, so I decided to make a noodle that I had never made before and I had never eaten it in a restaurant. Because the fried noodles sold in restaurants outside usually have pork, my family does not eat pork, so I have never eaten fried noodles. Today, I’m going to use a bunch of vegetarian food to make a bowl of fried noodles that are more fragrant than meat.

Many vegetarian dishes are well prepared and can definitely kill meat in seconds. The key to jajang noodles is jajang, but for me living in the south, I can’t buy the special sauce for making zjajang noodles. I simply use soy bean jam and sweet noodles that are available in supermarkets, so I made it today. The fried bean paste noodles must not be the authentic kind of fried bean paste noodles, but I can only say that the taste is definitely not inferior.

Alright, let’s get back to business, let’s witness the birth of a bowl of fried noodles!

A Bowl of Veggie Noodles that are More Fragrant Than Meat

1. Preparation: Dice oyster mushrooms, not too small; dice shiitake mushrooms, carrots, and onions; beat eggs; chop scallion, ginger, and garlic; mix soy sauce and sweet noodle sauce

2. Pour the oil in the hot pan, scramble the eggs first, you can use a little more oil, scramble the eggs a little bit, scramble the eggs well, and use up the oil. Then pour in at least 2 times more oil than usual for frying, 50% When it's hot, add pleurotus eryngii and carrots and fry for a while, then add shiitake mushrooms, fungus and onions. Fry over high heat until all the ingredients become soft and small. Add the green onion, ginger and garlic to the pot and fry the aroma

3. Pour the mixed sauce of soybean paste and sweet noodle paste, stir evenly so that all the ingredients are covered with the sauce, add a spoonful of sugar, and I also added two spoons of pickled peppers and chili oil (for those who like spicy food, you can be like me) If you feel that the sauce is a bit dry, you can pour some light soy sauce and cold water, and mix well.

4. Fry over high heat until all ingredients are evenly covered with sauce and when the sauce becomes thick, turn off the heat, pour the fried eggs into the pan and stir, the sauce is complete

5. At this point, you can smell the thick sauce scent, and you can start cooking the noodles. Before cooking the noodles, you can blanch some vegetables, broccoli, etc., and mix them with the noodles. Okay, the picture above, this is my fried sauce, it looks very tempting.

Tips:

Although all the ingredients are vegetarian (except eggs), this fried sauce is more fragrant than meat. People who eat it for the first time might even think that there must be meat in it, but it's actually completely vegetarian. You can also accompany other dishes as you like, but it is recommended not to omit the eggs and pleurotus eryngii, because the meat mainly comes from these two products.

The unfinished fried sauce can be sealed and stored in the refrigerator for at least 1-2 weeks. Take it out and steam it when you want to eat it, and then mix it with the noodles. It is another bowl of fragrant fried sauce noodles.

In general, this dish is simple and easy to make, and it will basically succeed, unless...unless you can't even fry eggs. In addition, you must use a non-stick pan when making fried sauce, otherwise...
