Abalone Claypot Rice with Xo Sauce

1. Prepare various materials: abalone, broccoli, corn, celery, abalone juice, XO sauce, oyster sauce. Don't throw away the abalone shell, you can use it for soup.

2. Soak the fragrant rice in advance, add boiling water to the oyster sauce and bring to the boil.

3. Dice celery and peel corn.

4. Catch and wash the abalone with cornstarch.

5. The abalone cutting knife is more convenient to taste and taste better. Cut vertically and cut at 45 degrees with an oblique knife horizontally.

6. Cut abalone.

7. The abalone is marinated with XO sauce, abalone juice, celery diced, and MSG.

8. Pour the water for soaking the rice, put the corn kernels into the rice, add the same amount of boiling water as the rice, cover and open the fire.

9. After it is boiled, change to a small fire and continue burning.

10. When the rice is boiled until the water is collected (the rice noodles have holes), put in the abalone and cover the lid and cook on low heat.

11. When the water in the rice gap has almost evaporated (the sound in the pot becomes smaller, you can use chopsticks to probe it), and evenly screw a small amount of fried rice into the gap between the sides of the pot.

12. Put the lid on and place it tilted toward the front, back, left, and right, and stay for a while, until it's in the frying pan.

13. Burn in four directions and place it on a small plate first.

14. Pick and wash broccoli.

15. Put broccoli into boiling water and cook.

16. Move the abalone aside, add broccoli, and drizzle oyster sauce on the surface.

17. Don’t waste the abalone shells and use them to make soup. Soak the water with the pork bones in advance and boil them in a casserole for an hour. Prepare cucumber and cut into strips for later use.

18. Cook until almost done, put the cucumber into the soup and cook.

19. Just add MSG, salt and celery diced.

Tips:

Abalone shells don’t want to be wasted and can be used to make soup, which is also very sweet.
