The method of making yeast; it is explained in detail in my "Carrot Bagel Bread". It is simple to soak raisins in red wine. Place them in the refrigerator and soak them slowly. You can use them only after two weeks.

The production of brown sugar juice: I brought the brown sugar back from Taiwan. It contains ginger. Cut the brown sugar into small pieces and fry in a non-stick pan. After melting, add 90 grams of water. After boiling, it will leave 115 grams of ginger. Refrigeration, this step is very important, donβt be lazy;

The production of hot noodles: add 150 grams of high-gluten flour to 150 grams of boiling water, stir evenly, put it in the refrigerator while it is hot, and refrigerate overnight. The next day, take it out and weigh it as 280 grams for use;

The above steps must be done in advance, and the main dough will be the next day: add all the main dough materials except wine-soaked raisins and butter to the basin, tear the hot noodles into small pieces, and stir them into a floc;

When the dough is not sticking to your hands, add the melted butter and continue to knead until the film can be pulled out. The whole kneading process takes about half an hour. Finally, add the sprinkled raisins, knead well, cover the lid, and ferment for 1 hour at room temperature. This step is very difficult. Gu said that the bread with good taste is kneaded by hand, because the temperature of the bread machine will increase and destroy the ingredients of the bread;

The fermented dough is rounded and ventilated. The total weight of the dough is 1070 grams, divided into four equal parts, each of 267 grams, put on the baking tray with a damp cloth and put it in the refrigerator to ferment for half an hour, then take a dough, flatten it and roll it into a strip. When rolled up from the inside, it becomes an oval shape;

Cover the cake mold with silicone oil paper, put in two dough embryos, cover with a damp cloth and put it in the refrigerator, and put the other two on a baking pan covered with silicone oil paper, cover with a damp cloth and leave it at room temperature for half an hour. Because the dough is large, I divided it twice. grilled;

Make icing: pour half an egg into an egg-beating bowl, add 100 grams of powdered sugar and a few drops of lemon juice, use an ACA whisk to beat at high speed until thick, as shown in the picture, put it in a piping bag and squeeze it to the proofed surface On the embryo, sprinkle coconut or almond diced on top, preheat the oven to 165 degrees, select hot air;

Tips:
1. This bread is so complicated. I made it for a day. The author went to Japan and France to study in order to develop a bread. This is nothing to me. How many bitter tears are behind a delicious bread!
