Cut the softened butter into small cubes.

Pour the sifted low-gluten flour and powdered sugar into the basin.

Knead into corn state.

Add the egg yolk and stir well.

Knead into a smooth dough, cover with plastic wrap and put it in the refrigerator for 1 hour.

After taking out the refrigerated dough, roll it into a round dough.

Put the rolled dough into a 6-inch pie mold.

Scrape off the excess dough and use a fork (or toothpick) to make holes in the dough.

Spread greased paper (or tin foil), put in cereals or baking stones.

Put it into the preheated oven at 180 degrees for 20 minutes, and then remove the oil paper and grains after 20 minutes. Let it bake for another 8 minutes. It's out of the oven, but it's cold on the drying rack.

To make the puff body: Pour milk, sugar, salt, and butter into a small pot and boil.

Sift in low-gluten flour, mix well and cook until dough. Away from the fire.

Add the egg liquid in four times and mix well.

Put the batter into a piping bag, line the baking tray with greased paper, and squeeze out a small puff round shape.

Put it into the preheated oven at 200 degrees for about 30 minutes (never open the oven door halfway). Ready to be used and cool but set aside.

350g whipped cream + 15g sugar, whipped up and put in a piping bag for later use.

Squeeze the whipped cream into the bottom of the cold puff.

Then squeeze into the top of the cool tart tower. The puffs are arranged with cream and placed on the tart tower.

Layer each layer of puffs with cream and layer them on top. The cream can be dipped in small cherries, blueberries, small leaves (or mint flavor).

To make caramel: Boil the sugar and water until it is caramelized and open fire. The fork can be used to provoke the degree of wire drawing.

Go directly around the Puff Tower a few times. If the caramel is dry in the middle, you can heat it up on a low heat and you can continue to go around. The high-value puff tower is complete!

Tips:
1. When making puffs, do not open the oven lid during the baking process, otherwise the puffs will collapse.
2. Every different brand-name oven loses its temper and adjusts the temperature according to its own.
