Preheat the oven to 230 degrees. Boil a pot of water, add salt to the water, boil and put in the washed small potatoes (without peeling), cook until the potatoes are soft, you can easily insert the chopsticks.

Take out the boiled potatoes and use a paper towel to absorb moisture on the surface for later use.

Prepare a baking tray, pour olive oil evenly, do not dig the oil, pour the oil to prevent the potatoes from sticking to the bottom, and then stack the small potatoes.

Use a potato pressing tool or a fork to press the potatoes longitudinally.

Then press it horizontally.

Then, brush the surface of the pressed potatoes with olive oil; then sprinkle with salt, then sprinkle with black pepper and your favorite herbs, I sprinkled rosemary and chopped parsley
