Alcoholic Peanuts
1.
Soak the raw peanuts in water overnight to soften the peanut skin and make it easy to remove
2.
This step is a patience. I tear the skin while watching TV~ After removing the peanut skin, follow the bottom of the peanut and split it in half.
3.
After absorbing excess water with kitchen paper, put it in a fresh-keeping bag and freeze overnight
4.
Dried red pepper shredded and set aside
5.
Take out the frozen peanuts, pour cold oil into the peanuts in a cold pan, and fry them slowly
6.
Fry until the peanuts are cooked
7.
Fish out peanuts
8.
Then turn on the fire again, pour in peanuts and fry again
9.
Fry until the peanuts are dry, drain them out with a colander
10.
Pour out the excess rapeseed oil in the pot, leave a little bit, pour in the shredded red pepper and a small dish of diced peppercorns, and sauté until fragrant
11.
Then pour in the fried peanuts and stir fry
12.
Add some salt to taste
13.
Add a little white sugar to enhance the flavor, and add a little pepper oil to stir fry evenly when it comes out of the pan
14.
Stir-fry evenly and then out of the pan
Tips:
1. Peanut peeling step must be patient;
2. You can leave it without pepper oil, just use pepper grains. I prefer to have a heavy numbness, so I added pepper oil to increase the numbness at the end. Remember that if you want to add pepper oil, it must be out soon. Before the pot, add the numbness too early and it will dissipate.
