Soak the vermicelli thoroughly in cold water, soak it softly, drain it and set aside. (I soaked for 2 hours and cut the vermicelli after soaking softly)

Marinate the minced meat with a little cooking wine, salt and minced ginger for 30 minutes, and chop the ginger, spring onion and garlic into mince.

Heat up the wok, add 3 tablespoons of oil, stir-fry with minced meat over high heat; after sautéing the water, add minced ginger and minced garlic to stir-fry.

Add Pixian red bean paste and stir fry for 2 minutes.

Add water, salt, sugar, light soy sauce, dark soy sauce and cooking wine.

Bring the water to a high heat, turn to medium heat, add the vermicelli, and stir until the soup is dry, sprinkle with chopped green onion and serve.
Tips:
1. The fans must be soaked in cold water in advance and drained, otherwise they will stick to the pot.
2. A fan of 100 grams is for 2 people. If there are many people in the family, you can increase the amount relatively.
