Haven't eaten authentic, so I don't know how it tastes. The shop selling sauerkraut had one, so I bought a pack. The store gave the seasoning bag and sauce, and also wrote the detailed method. This looks simple but it is still a bit difficult to operate, otherwise it will break easily and not fry well.
After reading the introduction of the store, there is also the difference between the dry material and the soup version. This is the dry material version for me. There are not many sauces, so I made the dry version. The cold noodles are very tough and chewy. The sauce has a sweet and sour taste, both sour and sweet. Maybe it will be better if you mix it with your own sauce.
Look on the Internet and say that some universities and villages in Xi'an sell them. It feels similar to the pancake fruit recipe, but the raw materials are different. I use an electric baking pan, and I can also use a frying pan.

Baked Cold Noodles

1. Heat the pot with a little oil. You can also use a pan without an electric baking pan at home (the effect of the induction cooker is not ideal), and the gas must be low.

2. Fry the ham slices first, spread the oil evenly; after the oil is hot, add the noodles and reduce the heat

3. Knock an egg on the noodle, spread it evenly with chopsticks, and spread it quickly, not for a long time, or the noodle will become hard; when the egg on the noodle is about 6 minutes old, use chopsticks to fork under the noodle and pick it up. You can turn it over with a shovel in your left hand

4. Brush the sauce after turning it over

5. Put sliced ham

6. Sprinkle with chopped green onion, dry ingredients, sesame seeds, and a little salt

7. Roll up with chopsticks and cut into sections

Tips:

The firepower is small, and it will not break if you do it a few times.
