Baked Potatoes with Eggs and Bacon
1.
Preheat the oven to 200 degrees. Use a fork or toothpick to make small holes in the potatoes, cover them with tin foil, and bake them in the oven for 30-45 minutes until the potatoes are soft, and then take them out.
2.
Cut the bacon into small pieces, add them to the frying pan and fry them crispy, and place them on kitchen paper to absorb the excess oil.
3.
Cut the top of the potatoes, dig out the middle part, and make a potato bowl.
4.
Add butter, light cream, bacon, salt and black pepper to the scooped potatoes and mix well to form mashed potatoes.
5.
Add the mashed potatoes to the potato bowl, dig a hole in the middle.
6.
Add eggs in the hole and sprinkle with cheddar cheese.
7.
Bake in the oven for 20-25 minutes until the eggs are set.
8.
Sprinkle with chopped coriander and serve.
