Baking, the cooking method of Hakka cuisine, is a cooking method in which soup and steam or salt or hot gas are used as the heat transfer medium to heat the marinated materials or semi-finished products until they are cooked.
There are four types of gratin: casserole gratin, Ding Shang gratin, oven gratin and salt gratin.

Ingredients

Baked Shrimp with Garlic and Cheese

1. After washing the shrimps, use a toothpick to pick out the shrimp thread one by one.

2. Because the nine-section shrimp skin is very hard, use scissors to cut the back of the shrimp, then use a kitchen knife to make a good opening from the shrimp head to the tail, add salt, white pepper and cooking wine and marinate for 10 minutes

3. Chop garlic cloves into puree, stir-fry in hot oil and set aside

4. If it is lumpy mozzarella cheese, use a tool to grind into shreds

5. Place the marinated shrimp in a baking dish lined with tin foil

6. Spread evenly the garlic that has been stir-fried in oil

7. Put evenly on the shredded mozzarella cheese

8. Sprinkle with chopped green onions

9. Preheat the oven and bake the middle layer at 200 degrees for 10 minutes

10. During the roasting process, the shrimp will shrink and bend, and it will be a little unsightly when it comes out of the oven.

Tips:

1. When choosing shrimps, try to choose the larger ones and the more meaty ones;
2. Before cutting the back of the shrimp, it will be easy to cut with scissors, avoid cutting it by hand;
3. Try to yaping the shrimp before putting the garlic and shredded cheese, so that the cheese can be held during the roasting process
