1. Wash the iron rod yam and set aside

2. Slice the tenderloin, add salt, sugar, light soy sauce, cooking wine, starch and marinate for about 10 minutes

8. Soak the cut yam in clear water to prevent oxidation (in fact, I did a small experiment. The iron rod yam is different from ordinary yam. It doesn’t oxidize if you don’t soak in water, hehe)

9. Boil the water in the pot, add the yam and blanch for 30 seconds

10. Stir it out in cold water to keep it crisp

11. Blanching snow peas and carrots together

16. Add meat slices and stir fry evenly
