Bawang Supermarket丨fried Pork with Yam

Wash the iron rod yam and set aside

Slice the tenderloin, add salt, sugar, light soy sauce, cooking wine, starch and marinate for about 10 minutes

Cut green onions and ginger into desired shapes

Okra cut into small pieces with beautiful cross-sections

Red pepper, snow peas, carrot cut into diamond-shaped slices

Garlic and green pepper slices

The iron rod yam is thinner, cut into diamond-shaped slices to look larger

Soak the cut yam in clear water to prevent oxidation (in fact, I did a small experiment. The iron rod yam is different from ordinary yam. It doesn’t oxidize if you don’t soak in water, hehe)

Boil the water in the pot, add the yam and blanch for 30 seconds

Stir it out in cold water to keep it crisp

Blanching snow peas and carrots together

Dip in cold water and fish out

Put oil in a hot pan, add the marinated meat slices, and fry quickly to turn white and serve

Leave the bottom oil in the pot, enlarge the onion, ginger, green and red pepper and stir fry to get the fragrance

Add yam, snow peas, carrot slices and stir fry evenly

Add meat slices and stir fry evenly

Add garlic slices, stir fry the okra evenly, add salt, and season with soy sauce

Finished product out of the pot

Tips:
1. Before stir-frying the iron rod yam, blanch water to keep it crisp
2. Freely match all kinds of ingredients as you like
3. The unused iron yam should be wrapped in plastic wrap and stored in the refrigerator to prevent oxidation
