Bear Goji Berries Buns

Prepare all kinds of ingredients.

First, wash the wolfberry, and pour it into the rice cooker with milk and water.

Select soup/porridge mode, click to adjust the speed to H (high speed), and beat for about 1 minute.

Pour the mashed wolfberry milk liquid from the wall breaker into the mixing bucket of the cook machine or the bucket of the bread machine, and add the yeast powder. If it is whipped by an ordinary food processor, it is best to filter it with a sieve to avoid too much residue and affect the taste.

Then add high-gluten flour, sugar, salt and eggs in turn.

Start the cook machine, mix well at low speed, and then form a smooth dough at medium and high speed.

Put the kneaded dough into the fermentation basin, cover with plastic wrap, put it in the oven, and ferment for about 50 minutes in the fermentation mode.

Ferment to about 1 times the size, take out and knead to remove the bubbles, and let it stand for 20 minutes.

Use a kitchen scale to divide the dough into small doughs of about 30 grams each, knead them round and put them in a mold. I use Xuechu U-shaped biscuit mold and pound cake mold, but other suitable long strip molds can also be used.

Put the dough in the lower part of the oven for a second fermentation, about 40 minutes.

When the dough is about eighth full, brush a little egg yolk on the surface and sprinkle with coconut paste.

Put it in the middle and lower part of the preheated oven, heat up and down at the same time, and bake at 150 degrees for about 15-20 minutes. The mold and dough are relatively small and easy to be cooked through. The specific time and temperature can be adjusted according to different ovens and mold sizes.

Remove the baked bread from the mold and place it on a drying net to cool.

While the bread is cool, choose some almond slices of the right size, and cut the biscuits into the right size.

Insert the biscuits in the right place on the bread to act as ears. Almond slices are glued to the bread with a little melted white chocolate as bear's hand.

Use the melted chocolate to draw the facial features of the little bear, and you're done.
Tips:
If you don’t have a cook machine and an oven, you can also make wolfberry bear buns, ferment at room temperature, or steam them in a steamer.
