Beef Balls

The beef is chopped into meat.

Mince scallion and ginger.

Put the chopped meat into a bowl, add salt, scallion and ginger, five-spice powder, egg, light soy sauce, cooking wine, and starch. Stir the meat vigorously in one direction.

Heat the pot and pour the oil. When the oil is 60% hot, change it to a low fire. Grab the stirred meat filling with your hands and squeeze it slightly to make the meat squeeze out of the tiger’s mouth.

Add stock (bone broth or chicken broth) to a pot and bring to a boil.

Add the fried meatballs, coat them well, and let the soup dry over high heat.
