Beef Noodles in Clear Soup

Wash the beef leg, cut into large pieces, add cooking wine, 20-25 grams of salt, knead the ginger, and marinate overnight.

Prepare the seasoning bag (I buy ready-made, or you can use pepper, star anise, fennel, cinnamon, and other common seasonings), dried hawthorn, ginger, scallion.

Add water to the pot, add the marinated beef in cold water, and after boiling, skim the foam.

Add the seasoning from step 2, and then add 2 tablespoons of cooking wine. Cook on low heat for 60 minutes.

Remove the cooked beef and let it cool thoroughly. Cut into thin slices. Wash the coriander and cut into small sections. Wash the garlic sprouts and cut into circles.

Season the beef broth with salt.

Cook the noodles in a boiling pot.

Put the noodles into a bowl, add beef slices, coriander, and garlic sprouts.

Just add an appropriate amount of beef broth.
Tips:
The soup for boiled beef is best added at a time. When eating noodles, use the original beef soup instead of diluting it with water.
If you like spicy food, you can pour some chili oil in it.
