Slice ginger, cut garlic into sections, separate garlic white and garlic green.

Wash the tripe and sirloin, cut into wide strips, blanch in cold water.

Add pulled oil, garlic white and ginger to a boil in the water, add the sirloin and tripe, add all the seasonings, cook on low heat for 2 hours, add garlic greens and simmer for 5 minutes.
