Eat flowers in spring and fruits in summer, and wild mushrooms in autumn and soup in winter.
"Do not strive for the beauty of spring, do not admire the prosperity of midsummer" Sophora japonicus, in addition to steamed Sophora japonica rice, scrambled eggs, fried egg cakes, buns with Sophora japonica...It can also be used with beef to make pot stickers and wontons that are tender on the outside and tender on the inside. The fleshless little guy, the faint scent of acacia flowers all over the house is the taste of spring! "

Beef Sophora Pot Stickers

1. Prepare the minced beef tenderloin.

2. 1 Add oyster sauce, salt, pepper, light soy sauce, pepper oil, sesame oil, and stir in one direction. 2 Slowly add the pepper water along the side of the bowl and stir in one direction. Preparation of pepper water ~ The pepper grains can be used after being soaked in boiling water for 1 hour in advance.

3. Ginger onion garlic. ~If you want the filling to be fragrant, put more onion and ginger.

4. Pour the beef filling into the ginger, shallot and garlic.

5. Mix and stir well.

6. 15 jin of fresh Sophora japonica flowers bought from the market O(∩_∩)O plucked old leaves and hard branches. ~ Big project.

7. Wash and remove.

8. Put an appropriate amount of salt in a pot of boiling water, pour the Sophora japonica flower, blanch it, remove it, take an appropriate amount, let it cool and squeeze the water to enlarge the bowl.

9. Pour the beef filling into the Sophora japonica, add a little salt, pepper, sesame oil, light soy sauce. ~ This is to add flavor to Sophora japonica.

10. Stir and glue together.

11. Take a piece of dumpling skin, take the Sophora japonica beef paste and put it in the middle of the dumpling skin. Use chopsticks to hold the meat filling to make the edge of the dumpling rectangular. Spread a little water on the top of the dumpling, fold it in half and pinch the middle, opening on both sides.

12. As shown in the picture, I personally recommend to wrap a little more meat filling to make the potstickers fuller, because the meat will shrink after frying.

13. Pack them one by one, just faster.

14. In a non-stick pan, heat less oil in the pan. Put the potstickers in a low heat and fry for a while, and the bottom will turn golden. ~ It is recommended to leave a little space between the pot stickers.

15. Add an appropriate amount of water to cover about 1/3 of the pot stickers.

16. Cover, cook on medium and small fire πŸ”₯ use the pot to steam and fry until the water is dry. ~ Potstickers will produce some oil.

17. Sprinkle the fragrant black sesame seeds evenly, add water again to cover the bottom of the pot stickers a little more, cover and continue to simmer.

18. Fry until the water is completely evaporated (there is a little oil from the pot stickers) and then turn off the heat.

19. The burnt outside and tender inside of the pot stickers are ready, and every bite is filled with the faint scent of acacia flowers and refreshing.

20. Guess how many of them I ate in one go (β€’Μ€βˆ€β€’Μ ).

Tips:

1. Please soak the pepper water in advance, soak 10 peppercorns in boiling water for more than one hour. The function is to remove the taint of the beef filling, and it can also enhance the flavor of the meat filling.
2. If you want the filling to be fragrant, please put more onion and ginger.
3. The beef filling must be stirred in one direction.
