Beef with Red Oil and Golden Needles

Cut off the roots of Flammulina velutipes, wash and control water.

Blanch the enoki mushrooms for later use.

A moderate amount of fat cattle.

Put the water in the pot to boil, put the fat cow, and remove it after the color changes.

The boiled beef is cleaned with warm water to remove any foam.

Prepare seasonings: green onion, ginger, pepper, star anise, hot pot base, Pixian bean paste (chopped).

Fill the pot with oil to heat up, and stir-fry the red oil with Pixian bean paste and hot pot base over low heat.

Add green onion ginger, pepper, star anise and stir fry until fragrant.

Add 2 small bowls of water.

Add some chicken noodles.

Bring to a boil and taste the saltiness, add salt to it, then blanch the dried enoki mushrooms and cook for one minute.

Add the blanched beef, boil again and turn off the heat.

Pour the vegetables and soup into a deep bowl.

Add chopped green onions, chopped coriander, chili noodles, and sesame pepper noodles.
15.
Fill the pot with oil again, and burn until it smokes.
16.
Pour it over the chopped green onion and chili noodles while it is still hot.

Finished product.
